Ingredients
  

  • 2 medium-sized ripe avocadoes approx. 270 g, peeled and cut into chunks
  • 17 g unsweetened cocoa powder or raw cacao powder
  • 30 g + 1 tbsp plain cream cheese
  • 8 g keto-friendly sweetener like erythritol
  • 60 ml unsweetened almond drink
  • 50 ml + 2 tbsp water
  • a pinch of salt
  • 2 tbsp strong coffee like espresso optional

Instructions
 

  • Place the avocadoes, cream cheese, cocoa powder, sweetener, almond drink and coffee into a blender or food processor. Add the water in small portions and check the consistency of the mousse step by step. Blend until smooth. You may need to add a slightly different amount of water compared to the one written in the recipe.
  • Prepare the topping: using a small whisk, mix 1 tablespoon of cream cheese with 2 tablespoons of water. You can add some sweetener if you want.
  • Place the mousse into a few small cups and add the topping (you can also add some leaves of fresh mint if you want).
  • Store the mousse in a closed container in the fridge if you are not serving it immediately (it keeps well in the fridge for up to 24 hours).
