To make this easy low carb recipe, you’ll need:
- chicken thighs
- unwaxed lemons (even better if they are organic)
- lemon juice
- olive oil
- fresh parsley (or thyme)
- dried oregano (optional)
- salt and pepper
The steps for this quick keto lemon chicken are quite easy to follow:
- Prepare a baking pan with 1/2 tablespoon of olive oil, 4-5 slices of lemon (previously washed) and 2 chicken thighs.
- Drizzle 1/2 tablespoon of olive oil, the juice of 1/2 lemon all over the chicken. Add a pinch of salt and pepper.
- Bake at 190°C for approx. 40-50 minutes, ensure the chicken is completely cooked through before serving. Ensure the chicken is fully cooked through before serving.
- Halfway through the cooking time, remove the pan from the oven and carefully turn the chicken a couple of times to mix all the ingredients.
- Before putting back the pan in the oven, if the chicken looks too dry, you can add a couple of tablespoons of water or a bit of olive oil.
- Once ready, remove the pan from the oven and serve the chicken with a few extra slices of lemon and some fresh parsley. Taste and adjust the amount of salt and black pepper if needed.
