This is the perfect recipe for both all the salmon lovers out there and those who still need some more time to learn how to love fish.

Salmon is an oily fish rich in essential fatty acids called omega-3. It’s a highly nutritious choice, easy to cook and quite versatile. Perfect for a quick meal, a comforting curry or stew or a handy traybake dinner: there are so many recipes you can make with salmon.

Salmon fillets or darnes are the handiest choices for this recipe (and many other quick meals). Based on the size of the pieces of salmon you are using, you may need to use two of them for each serving instead of one. The cooking time will also change according to the thickness of the fillets/darnes.

To make this one pan keto creamy salmon, you will need:

  • fresh salmon fillets or darnes
  • fresh mushrooms (any kind will work, so feel free to pick your favourite!)
  • fresh cream and cream cheese (for extra creaminess)
  • shallots
  • olive oil
  • salt and pepper
  • fresh thyme

The preparation is really easy. All you have to do is following these steps:

  • Prepare the finely sliced mushrooms and shallots (the slices of mushrooms should not be too thin).
  • Place the vegetables in a baking pan, add a drizzle of olive oil and pinch of salt and pepper, then mix well.
  • Place the salmon on top of your vegetables.
  • Add the fresh cream.
  • Add a drizzle of olive oil and a pinch of salt and pepper on top of the salmon.
  • Bake in a preheated oven at 180°C for approx. 15 minutes or until well cooked through.
  • When the salmon is ready, remove the pan from the oven and, in a small bowl, mix 3/4 of the liquid with some cream cheese. Once you get a creamy consistency, put back this mix in the pan. Warm up the sauce in the oven for approx. 1 minute.
  • Serve warm with fresh thyme on top.

The additional step that involves mixing some cream cheese with the liquid mixture that’s already in the pan may seem useless but it will help you to create a meal with a special tasty finish. If you don’t have (or don’t like) cream cheese, you could also opt for mascarpone or ricotta.
