Ingredients

  • 2 lbs chicken wings, tips removed, drumettes and flats separated
  • 1 tbsp baking powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup hot sauce such as Frank's RedHot
  • ¼ cup unsalted butter
  • 1 tbsp white vinegar
  • ¼ tsp Worcestershire sauce
  • ¼ tsp cayenne pepper optional, for extra heat
  • Celery sticks
  • Blue cheese dressing for serving, ensure it's low carb

Instructions

  • Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper and set a wire rack on top.
  • In a large bowl, combine the baking powder, garlic powder, onion powder, paprika, salt, and black pepper.
  • Add the chicken wings to the bowl and toss until they are evenly coated with the spice mixture.
  • Arrange the wings in a single layer on the wire rack. Ensure they are not touching to allow for even cooking and crispiness.
  • Bake for 40 minutes, or until the wings are golden brown and crispy, turning them halfway through the cooking time.
  • While the wings are baking, prepare the buffalo sauce by combining the hot sauce, butter, white vinegar, Worcestershire sauce, and cayenne pepper (if using) in a saucepan over medium heat. Stir until the butter is melted and the sauce is well combined.
  • Once the wings are cooked, remove them from the oven and let them rest for 5 minutes.
  • Place the wings in a clean large bowl, pour the buffalo sauce over the wings, and toss to coat evenly.
  • Serve immediately with celery sticks and low carb blue cheese dressing on the side.

Notes

For the crispiest wings, make sure your chicken is as dry as possible before seasoning. Patting them dry with paper towels works well. The baking powder helps to draw moisture to the surface of the skin, crisping it up as it bakes. Avoid using aluminum-based baking powder to prevent any metallic taste. If you're sensitive to spice, you can adjust the amount of cayenne pepper or omit it entirely.
