Ingredients

  • 1 teaspoon garlic powder 3.1g
  • 1 teaspoon onion powder 2.1g
  • Salt and pepper to taste

For the Herb Butter:

  • ½ cup unsalted butter softened (113g)
  • 2 tablespoons fresh parsley finely chopped (7.6g)
  • 1 tablespoon fresh chives finely chopped (3.8g)
  • 1 teaspoon fresh thyme leaves 0.8g
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

  • Prepare the Herb Butter: In a small bowl, combine the softened butter, chopped parsley, chives, thyme leaves, minced garlic, and a pinch of salt and pepper. Mix well until all ingredients are incorporated. Set aside or refrigerate if making ahead of time.
  • Season the Pork Steaks: Pat the pork steaks dry with paper towels. Season both sides of each steak with garlic powder, onion powder, salt, and pepper, ensuring an even coat.
  • Heat the Pan: Place a large skillet over medium-high heat and add the olive oil. Allow the oil to heat up until it's shimmering but not smoking.
  • Cook the Pork Steaks: Carefully place the seasoned pork steaks in the skillet. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C) for medium-rare. Adjust the cooking time if you prefer your pork more well-done.
  • Rest the Pork Steaks: Once cooked to your desired doneness, transfer the pork steaks to a plate and let them rest for 5 minutes. This allows the juices to redistribute, ensuring a moist and tender steak.
  • Top with Herb Butter: Top each pork steak with a generous dollop of the prepared herb butter. Allow the residual heat from the steaks to melt the butter, creating a flavorful sauce.
  • Serve: Serve the pork steaks hot, garnished with additional fresh herbs if desired.
