Ingredients

  • 1 large head Cauliflower Florets (about 1 lb / 450 g)
  • 2 cups Cheddar Cheese (shredded) (8 oz / 225 g)
  • 4 oz Cream Cheese (113 g)
  • 1 cup Heavy Cream (240 ml)
  • ½ cup Buffalo Sauce (120 ml)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 2 tbsp Olive Oil (30 ml)
  • 2 tbsp Green Onions (for garnish) (optional, chopped)

Instructions

  • Preheat your oven to 375°F (190°C). This will ensure your mac 'n cheese bakes evenly and gets that perfect golden top.
  • Cut the cauliflower into small florets. In a large pot, bring water to a boil and add a pinch of salt. Blanch the cauliflower florets for about 5 minutes until they are slightly tender but still firm. Drain and set aside.
  • In a medium saucepan over medium heat, combine the heavy cream and cream cheese. Stir until the cream cheese melts and combines smoothly with the heavy cream. This should take about 2-3 minutes.
  • To the cream mixture, add the shredded cheddar cheese, buffalo sauce, garlic powder, onion powder, salt, and black pepper. Stir continuously until the cheese is fully melted and the sauce is creamy and well combined.
  • In a large mixing bowl, combine the blanched cauliflower florets with the cheese sauce. Stir gently to ensure all the cauliflower is coated evenly with the sauce.
  • Pour the cauliflower mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it out evenly.
  • Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
  • Once out of the oven, let it cool for a few minutes before garnishing with chopped green onions if desired. Serve hot and enjoy your Spicy Buffalo Cauliflower Mac 'n Cheese!

Notes

For extra heat, feel free to add more buffalo sauce or sprinkle some red pepper flakes on top before serving. This dish can be stored in an airtight container in the refrigerator for up to 3 days and reheats well in the oven or microwave.
