Ingredients

  • 1.5 pounds Chicken breasts, boneless and skinless 680g
  • ½ cup Homemade or store-bought low carb BBQ sauce 120ml
  • 2 tablespoons Olive oil 30ml
  • 8 cups Mixed salad greens 200g
  • 1 cup Cherry tomatoes, halved 150g
  • 1 medium Cucumber, diced 200g
  • ¼ cup Red onion, thinly sliced 40g
  • 1 large Avocado, sliced 200g
  • ½ cup Cheddar cheese, shredded 50g
  • ½ cup Ranch dressing, low carb 120ml
  • 1 tablespoon Apple cider vinegar 15ml
  • 1 teaspoon Smoked paprika 2g
  • Salt and pepper to taste

Instructions

  • Preheat your grill or grill pan to medium-high heat.
  • Brush the chicken breasts with olive oil and season with salt, pepper, and smoked paprika.
  • Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C) and the meat is no longer pink in the center.
  • Once done, remove the chicken from the grill, let it rest for a few minutes, and then slice it into strips.
  • In a large bowl, toss the mixed salad greens, cherry tomatoes, diced cucumber, and red onion slices.
  • In a small bowl, whisk together the low carb BBQ sauce and apple cider vinegar to create a tangy BBQ dressing.
  • Arrange the salad greens mixture on plates, and top with sliced grilled chicken, avocado, and shredded cheddar cheese.
  • Drizzle the tangy BBQ dressing over each salad and serve immediately.

Notes

Adjust the amount of BBQ sauce used to fit your taste and carb allowance. For a smokier flavor, consider using smoked paprika or a dash of liquid smoke in the dressing.
