Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • 8 ounces cream cheese softened
  • 7 ounces canned green chilies drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ cup heavy cream
  • Fresh cilantro for garnish (optional)

Instructions

  • Place the chicken breasts at the bottom of the slow cooker. Season them with salt and pepper.
  • In a medium bowl, combine the chicken broth, softened cream cheese, green chilies, garlic powder, onion powder, cumin, and chili powder. Whisk until the mixture is smooth and well-combined.
  • Pour the cream cheese mixture over the chicken in the slow cooker, ensuring the chicken is well-coated.
  • Cover and cook on low for 6 hours or until the chicken is tender and fully cooked through.
  • Once cooked, remove the chicken from the slow cooker and shred it with two forks.
  • Add the shredded chicken back into the slow cooker and stir in the heavy cream until everything is well mixed.
  • Let the mixture heat through for an additional 15 minutes on low.
  • Serve hot, garnished with fresh cilantro if desired.

Notes

For a thicker sauce, you can remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
This dish can be served over cauliflower rice or with a side of keto-friendly vegetables for a complete meal.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat thoroughly before serving.
