Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • ¼ cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp minced garlic
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • 1 large red onion, sliced
  • 1 red bell pepper, sliced
  • ½ cup pitted Kalamata olives
  • ½ cup chicken broth
  • Feta cheese for garnish optional
  • Fresh parsley for garnish optional

Instructions

  • Place the chicken thighs at the bottom of the slow cooker.
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, oregano, thyme, and rosemary to create the marinade.
  • Pour the marinade over the chicken, ensuring each piece is well coated.
  • Top the chicken with sliced red onions and red bell pepper, distributing them evenly across the chicken.
  • Scatter the Kalamata olives amongst the vegetables and chicken.
  • Pour the chicken broth into the slow cooker, around the sides, to avoid washing away the marinade from the chicken.
  • Cover and cook on high for 4 hours or on low for 6-8 hours, until the chicken is tender and fully cooked.
  • If desired, garnish with crumbled feta cheese and fresh parsley before serving.

Notes

To ensure even cooking, avoid opening the lid of the slow cooker frequently. If you prefer a crispier skin, you can place the cooked chicken thighs under a broiler for a few minutes before serving. This dish pairs beautifully with cauliflower rice or a fresh Greek salad for a complete keto-friendly meal.
