Ingredients

  • 2 lbs chicken wings approx. 900g
  • ¼ cup tamarind paste 60ml
  • 2 tablespoons apple cider vinegar 30ml
  • 1 tablespoon low-sodium soy sauce 15ml
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated, 15g
  • 1 teaspoon cayenne pepper 2g
  • ½ teaspoon smoked paprika 1g
  • ¼ teaspoon black pepper 0.5g
  • ½ teaspoon salt 2g
  • 2 tablespoons olive oil 30ml
  • 1 tablespoon erythritol optional for a balance of sweetness, 12g

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, whisk together the tamarind paste, apple cider vinegar, low-sodium soy sauce, minced garlic, grated ginger, cayenne pepper, smoked paprika, black pepper, and salt until well combined. If you're using erythritol, add it to the mixture to balance the tartness of the tamarind.
  • Add the chicken wings to the bowl and toss until they are evenly coated with the tamarind mixture. Let the wings marinate for at least 10 minutes.
  • Arrange the marinated wings on the prepared baking sheet in a single layer, ensuring they are not touching.
  • Drizzle the olive oil over the wings to help them crisp up in the oven.
  • Bake in the preheated oven for 45 minutes, or until the wings are golden brown and crispy. Turn the wings halfway through the cooking time to ensure even browning.
  • Remove from the oven and let them rest for a few minutes before serving.

Notes

If you prefer a saucier wing, you can reserve some of the marinade before adding the chicken wings, and then simmer it in a small saucepan over medium heat until thickened. Brush this glaze over the wings just before serving. For an extra kick, garnish with fresh chopped cilantro or a sprinkle of red chili flakes.
