Equipment

  • Medium mixing bowl
  • Spatula or wooden spoon
  • Grater
  • Garlic press
  • Measuring cups and spoons

Ingredients

  • 1 ½ cups whole milk ricotta cheese
  • ½ cup homemade or store-bought pesto ensure low-carb
  • ¼ cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon black pepper or to taste
  • Fresh basil leaves for garnish optional

Instructions

  • Gather all the ingredients required for the dip. Ensure the ricotta cheese and pesto are at room temperature to blend smoothly.
  • In a medium mixing bowl, add the ricotta cheese and pesto. Using a spatula or wooden spoon, mix until both are well combined and the mixture appears uniform in color.
  • Stir in the grated Parmesan cheese, minced garlic, fresh lemon juice, sea salt, and black pepper into the ricotta and pesto mixture. Mix thoroughly until all the ingredients are evenly distributed.
  • Taste the dip and adjust the salt and pepper as needed. If the dip is too thick, you can add a teaspoon of olive oil or water to reach the desired consistency.
  • Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, give the dip a quick stir and transfer it to a serving bowl.
  • Sprinkle with fresh basil leaves for a pop of color and an additional burst of flavor.

Notes

For the best flavor, consider using homemade pesto made with fresh basil, garlic, pine nuts, Parmesan cheese, and olive oil.
The dip can be stored in an airtight container in the refrigerator for up to 3 days.
Serve with an array of keto-friendly vegetables such as cucumber slices, bell pepper strips, or celery for dipping.
As a variation, consider adding chopped sun-dried tomatoes or a pinch of red pepper flakes for a different twist.
