Ingredients

  • ½ cup coconut oil melted
  • ½ cup unsweetened almond butter
  • ¼ cup sugar-free chocolate syrup
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon peppermint extract
  • ¼ cup powdered erythritol or preferred keto sweetener
  • pinch sea salt
  • sugar-free dark chocolate chips for garnish

Instructions

  • In a medium mixing bowl, combine the melted coconut oil and almond butter. Whisk them together until smooth and well blended.
  • Sift in the unsweetened cocoa powder and powdered erythritol into the mixture. Stir until the mixture becomes a thick, glossy chocolate paste.
  • Add the peppermint extract and a pinch of sea salt to enhance the flavors. Mix thoroughly to ensure the mint is evenly distributed throughout the chocolate mixture.
  • Line a muffin tin with silicone or paper liners. Using a spoon, fill each cavity with the chocolate mint mixture, pressing down slightly to ensure they hold their shape.
  • Place the muffin tin in the freezer for about 30 minutes or until the fat bombs are completely firm.
  • Once set, remove the fat bombs from the muffin tin. If desired, melt some sugar-free dark chocolate chips and drizzle over the top for an extra layer of flavor. Enjoy immediately or store in an airtight container in the fridge for up to two weeks.
