Ingredients

For the Vanilla Whipped Cream:

  • 1 cup heavy whipping cream 240ml
  • 2 tbsp powdered erythritol 24g
  • 1 tsp pure vanilla extract 5ml

For the Berry Layers:

  • ½ cup strawberries, sliced about 4 large strawberries / 72g
  • ½ cup raspberries 62g
  • ½ cup blueberries 74g
  • ½ cup blackberries 72g

Instructions

  • Prepare the Berries: Wash all the berries and pat them dry. Slice the strawberries and set all the berries aside.
  • Make the Vanilla Whipped Cream: In a large mixing bowl, combine the heavy whipping cream, powdered erythritol, and vanilla extract. Using an electric mixer, whip the mixture on high speed until stiff peaks form, about 3-5 minutes.
  • Assemble the Parfaits: Take four serving glasses and begin layering the parfait. Start with a spoonful of vanilla whipped cream at the bottom, followed by a layer of mixed berries. Repeat the layers until the glasses are filled to the top, finishing with a dollop of whipped cream.
  • Garnish: Optionally, garnish each parfait with a fresh berry or a sprinkle of grated dark chocolate for an extra touch of elegance.

Notes
