Ingredients

Celeriac (celery root)

  • 1 large celeriac (celery root) approximately 1 lb or 450g
  • 3 tbsp avocado oil 45ml
  • 1 tsp paprika 2g
  • ½ tsp garlic powder 1g
  • ½ tsp onion powder 1g
  • ¼ tsp cumin 0.5g
  • sea salt to taste
  • freshly ground black pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Peel the celeriac and cut it into fries, approximately 1/4 inch thick, to ensure even cooking.
  • In a large bowl, toss the celeriac fries with avocado oil until they are well-coated.
  • In a small bowl, mix together the paprika, garlic powder, onion powder, and cumin.
  • Sprinkle the spice mixture over the celeriac fries and toss until evenly coated. Season with sea salt and freshly ground black pepper to taste.
  • Arrange the fries in a single layer on the prepared baking sheet, ensuring they are not touching for optimal crispiness.
  • Bake in the preheated oven for 25 minutes, or until golden and crispy, turning halfway through the cooking time.
  • Remove from the oven and let them sit for a couple of minutes to crisp up further before serving.

Notes

For extra crispiness, you can sprinkle the fries with a tablespoon of almond flour before baking. Keep an eye on the fries as ovens may vary and adjust cooking time as necessary. Serve with your favorite keto-friendly dipping sauce.
