Ingredients

  • 1 lb corned beef, chopped
  • 2 cups sauerkraut, drained and rinsed
  • 1 cup shredded Swiss cheese
  • 1 cup heavy cream
  • 4 large eggs
  • ¼ cup sugar-free Thousand Island dressing
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ cup shredded mozzarella cheese (for topping)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.
  • In a large mixing bowl, combine the chopped corned beef and sauerkraut, ensuring the sauerkraut is well-drained.
  • In another bowl, whisk together the heavy cream, eggs, Thousand Island dressing, garlic powder, onion powder, black pepper, and smoked paprika until smooth.
  • Spread half of the corned beef and sauerkraut mixture in the baking dish, pour half of the creamy mixture over it, and sprinkle half of the Swiss cheese on top. Repeat the layers with the remaining ingredients.
  • Sprinkle the shredded mozzarella cheese evenly over the top of the casserole.
  • Bake for 30 minutes, or until the cheese is bubbly and golden brown.
  • Let the casserole cool for about 5 minutes before slicing. Serve warm and enjoy!

Notes

For an extra kick, consider adding a teaspoon of horseradish to the creamy mixture. This casserole can be stored in the refrigerator for up to 3 days and reheats beautifully in the oven or microwave.
