Ingredients

  • 2 New York Strip Steaks approximately 1 inch thick, around 10 ounces each or 280 grams
  • 1 tsp Kosher salt 5g
  • ½ tsp freshly ground black pepper 1g
  • 2 tbsp olive oil 30ml
  • 4 tbsp unsalted butter 56g
  • 2 cloves garlic minced, 6g
  • 1 tbsp fresh thyme leaves 1g
  • 1 tbsp fresh rosemary chopped, 1g

Instructions

  • Remove the steaks from the refrigerator and let them sit at room temperature for about 15 minutes before cooking. This ensures even cooking.
  • Preheat your skillet over medium-high heat. While the skillet is heating, pat the steaks dry with paper towels and season both sides with salt and pepper.
  • Add olive oil to the preheated skillet. Once the oil is shimmering, carefully place the steaks in the skillet. Sear the steaks for 3-4 minutes on one side without moving them to get a good crust.
  • Flip the steaks and add the butter, garlic, thyme, and rosemary to the skillet. As the butter melts, spoon it over the steaks repeatedly, cooking for another 3-4 minutes for medium-rare, or longer to your desired doneness.
  • Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing. This allows the juices to redistribute throughout the meat.
  • After resting, slice the steaks against the grain, serve with the herb butter from the skillet drizzled on top, and enjoy immediately.

Notes

For the best results, use a meat thermometer to check the doneness of your steaks. The USDA recommends a minimum internal temperature of 145°F (63°C) for medium-rare.
Feel free to adjust the herbs in the butter to suit your taste. Parsley, chives, or oregano also work wonderfully with steak.
If you're watching your sodium intake, you may reduce the salt or use a salt substitute.
