Instructions
Remove the steaks from the refrigerator and let them sit at room temperature for about 15 minutes before cooking. This ensures even cooking.
Preheat your skillet over medium-high heat. While the skillet is heating, pat the steaks dry with paper towels and season both sides with salt and pepper.
Add olive oil to the preheated skillet. Once the oil is shimmering, carefully place the steaks in the skillet. Sear the steaks for 3-4 minutes on one side without moving them to get a good crust.
