Ingredients

  • 1 lb ground beef (454g)
  • 6 slices bacon, chopped (about 6 oz/170g)
  • 1 medium onion, diced (about 4 oz/113g)
  • 2 cloves garlic, minced
  • 1 cup heavy cream (240ml)
  • 2 large eggs
  • ½ cup sugar-free ketchup (120ml)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 cups shredded cheddar cheese (8 oz/227g)
  • ¼ cup grated Parmesan cheese (1 oz/28g)

Instructions

  • Preheat your oven to 350°F (175°C). In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.
  • In the same skillet with the bacon fat, add the diced onion and cook until translucent. Add the minced garlic and cook for an additional minute.
  • Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking up the meat with a spatula, until browned and no longer pink. Drain any excess grease.
  • In a mixing bowl, whisk together the heavy cream, eggs, sugar-free ketchup, Worcestershire sauce, salt, and pepper until well combined.
  • Spread the cooked ground beef mixture evenly in the bottom of a greased 9x13 inch (23x33 cm) baking dish. Pour the cream and egg mixture over the beef. Sprinkle the cooked bacon pieces evenly across the top.
  • Mix the shredded cheddar cheese and grated Parmesan cheese together, then sprinkle the cheese mixture over the bacon layer.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  • Remove from the oven and let the casserole sit for 5 minutes before serving. This allows the casserole to set and makes it easier to slice.

Notes

For an even heartier casserole, you can add a layer of sliced pickles or chopped tomatoes before adding the cheese. This casserole can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave when ready to enjoy again.
