Ingredients

  • 4 large artichokes (approx. 3 pounds / 1.4 kilograms)
  • ¼ cup olive oil (60ml)
  • 4 cloves garlic, minced (approx. 16g)
  • 1 lemon, juiced and zested (approx. 44ml juice, 5g zest)
  • 2 cups chicken or vegetable broth (480ml)
  • 1 tsp sea salt (5g)
  • ½ tsp black pepper (1g)
  • 2 tbsp fresh parsley, chopped (8g)
  • 1 bay leaf

Instructions

  • Start by prepping the artichokes. Trim the stems and remove the tough outer leaves. Slice off the top inch of the artichokes to remove the thorny tips. Cut them in half lengthwise and use a spoon to scoop out the fuzzy choke in the center.
  • In a large Dutch oven, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
  • Place the artichoke halves cut-side down in the Dutch oven. Cook for about 5 minutes until the cut sides begin to brown.
  • Pour in the lemon juice, zest, and broth. Bring the mixture to a simmer.
  • Add the salt, pepper, parsley, and bay leaf. Cover the Dutch oven with a lid and reduce the heat to low.
  • Let the artichokes braise for 35-40 minutes or until they are tender and can be easily pierced with a knife.
  • Once cooked, remove the artichokes with a slotted spoon and transfer them to a serving platter.
  • If desired, reduce the remaining liquid in the Dutch oven over medium-high heat for a few minutes to thicken it into a sauce.
  • Drizzle the sauce over the artichokes and serve warm.

Notes

Choose artichokes that feel heavy for their size and have tightly packed leaves, as these are often fresher and more flavorful.
The cooking liquid can be adjusted according to the size and type of your Dutch oven. If it evaporates too quickly, add more broth as needed.
Leftover braised artichokes can be stored in an airtight container in the refrigerator for up to 3 days and can be reheated gently before serving.
