Ingredients

For the Pizza Crust

  • 1 ½ cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • ½ cup almond flour
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning

For the Toppings

  • ½ cup mozzarella cheese shredded

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, then heat for another 30 seconds until melted and smooth.
  • In a mixing bowl, whisk together the egg, almond flour, baking powder, garlic powder, Italian seasoning, salt, and pepper. Add the melted cheese mixture to this bowl and mix until a dough forms.
  • Spread the dough onto a parchment-lined baking sheet to form a 10-inch round crust. Bake in the preheated oven for 10-12 minutes, or until golden brown.
  • In a skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and lemon juice, seasoning with salt and pepper to taste. Allow the sauce to thicken for about 3-5 minutes.
  • In the same skillet, add the shrimp to the creamy garlic sauce. Cook for 4-5 minutes, or until the shrimp are pink and opaque. Add the fresh spinach and cook until wilted.
  • Once the crust is done, remove it from the oven. Spread the creamy garlic shrimp and spinach mixture evenly over the crust.
  • Top with the shredded mozzarella cheese.
  • Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before slicing and serving.
