Ingredients

  • 1 pound Chicken breast, cooked and shredded 454g
  • 4 cups Broccoli florets, steamed about 300g
  • 8 ounces Cream cheese, softened 227g
  • ½ cup Heavy cream 120ml
  • ½ cup Chicken broth 120ml
  • 1 cup Cheddar cheese, shredded 113g
  • ½ cup Parmesan cheese, grated 50g
  • 1 teaspoon Garlic powder 3g
  • 1 teaspoon Onion powder 3g
  • ½ teaspoon Salt 3g
  • ¼ teaspoon Black pepper 0.5g
  • 1 tablespoon Olive oil 15ml

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil.
  • In a large mixing bowl, combine the softened cream cheese, heavy cream, chicken broth, garlic powder, onion powder, salt, and black pepper. Whisk until the mixture is smooth and creamy.
  • Fold in the cooked and shredded chicken breast and steamed broccoli florets into the cream cheese mixture until they are well coated.
  • Transfer the chicken and broccoli mixture into the prepared baking dish, spreading it out evenly.
  • Sprinkle the shredded cheddar cheese and grated Parmesan cheese over the top of the casserole.
  • Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly, and the edges of the casserole are golden brown.
  • Remove the casserole from the oven and let it sit for a few minutes before serving.

Notes

To ensure this dish stays keto-friendly, use full-fat cream cheese and avoid low-fat versions.
The chicken can be cooked in advance or you can use rotisserie chicken to save time.
