Ingredients

  • 2 cups shredded cooked chicken
  • ½ cup buffalo sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup cream cheese softened
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 large egg roll wrappers or low-carb alternatives
  • 1 tablespoon olive oil for brushing

Instructions

  • In a large mixing bowl, combine the shredded chicken, buffalo sauce, shredded mozzarella, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  • Lay an egg roll wrapper on a clean, flat surface with one corner pointing towards you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a bit of water to help seal the edges if necessary. Repeat this step for all wrappers.
  • In a large skillet, heat a few tablespoons of olive oil over medium heat. Alternatively, you can use an air fryer for a healthier option.
  • If frying, place the egg rolls in the skillet, seam side down, and cook for about 3-4 minutes on each side, or until golden brown and crispy. If using an air fryer, preheat it to 375°F (190°C) and cook the egg rolls for about 12-15 minutes, flipping halfway through.
  • Once cooked, remove the egg rolls from the skillet or air fryer and let them cool slightly. Serve them hot with extra buffalo sauce or ranch dressing for dipping.

Notes

For a spicier kick, consider adding diced jalapeños or red pepper flakes to the filling. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results.
