Ingredients

  • 1 ½ cups fresh blueberries (170g)
  • 3 tbsp powdered erythritol (36g)
  • 2 cups cold water (480ml)
  • ½ cup fresh lemon juice (approximately 4 lemons, 120ml)
  • Zest of 1 lemon
  • ½ tsp liquid stevia (or to taste)
  • Pinch of salt

Instructions

  • Begin by washing the blueberries and zesting one lemon. Set aside.
  • In a blender, combine the fresh blueberries, powdered erythritol, cold water, fresh lemon juice, lemon zest, liquid stevia, and a pinch of salt.
  • Blend on high until the mixture is smooth, ensuring the erythritol is well dissolved.
  • Taste the mixture and adjust the sweetness with additional erythritol or stevia if needed.
  • Pour the blended mixture through a fine mesh strainer into a large bowl to remove the blueberry skins and any remaining solids for a smoother popsicle.
  • Distribute the strained mixture evenly into popsicle molds.
  • Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  • To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
  • Serve immediately or store in the freezer in an airtight container separated by parchment paper.

Notes

The nutritional values are estimated per popsicle and may vary depending on the size of the molds used. Adjust the amount of sweetener to suit your preference and the sweetness of the blueberries. If you prefer a creamier popsicle, consider adding a small amount of unsweetened almond milk to the mixture before freezing.
