1poundground beef
1mediumonion, finely chopped
2clovesgarlic, minced
1tablespoonchili powder
1teaspoonground cumin
½teaspoonpaprika
Salt and pepper, to taste

1mediumavocado, diced
½cupcherry tomatoes, halved
¼cupfresh cilantro, chopped
1lime, cut into wedges
¼cupsour cream (optional, for garnish)
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Spoon about 1/4 cup (1 oz / 28 g) of shredded cheese into small piles on the parchment paper, spaced well apart. Flatten each pile into a circle, about 4 inches in diameter.
Bake in the preheated oven for 5-7 minutes or until the cheese melts and the edges begin to brown slightly. Watch carefully to avoid burning.
Remove from the oven and let cool for 2-3 minutes. Carefully lift the cheese circles and drape them over the handle of a wooden spoon or any other utensil that’s suspended between two objects. This will allow them to cool in a taco shell shape.
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add the chopped onion to the skillet and sauté with the beef until translucent.
Stir in minced garlic, chili powder, ground cumin, paprika, salt, and pepper. Cook for another 2 minutes, stirring frequently.
Assemble the tacos by filling each cheese shell with the beef mixture, then top with diced avocado, cherry tomatoes, cilantro, and a squeeze of lime juice. Add a dollop of sour cream if desired.
Serve immediately for the best texture of the cheese shells.
