Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • ¼ cup unsalted butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 2 tbsp Worcestershire sauce (ensure no added sugar)
  • 2 bay leaves
  • ½ cup heavy cream
  • 2 tbsp coconut flour (for thickening)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Heat a large pot over medium heat and add half of the butter to melt.
  • Brown the beef cubes in batches to ensure they are seared on all sides, then set aside.
  • In the same pot, add the remaining butter along with the diced onions. Sauté until the onions are translucent.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Return the beef to the pot and add beef broth, sea salt, black pepper, smoked paprika, Worcestershire sauce, and bay leaves. Stir to combine.
  • Bring the stew to a boil, then reduce the heat to low and simmer covered for 1 hour and 15 minutes.
  • Remove the bay leaves, then sprinkle and whisk in the coconut flour to thicken the stew. Allow to simmer for an additional 15 minutes.
  • Stir in the heavy cream and cook for a further 5 minutes until everything is heated through.
  • Taste and adjust seasoning if necessary.
  • Garnish with fresh parsley before serving.

Notes

If you prefer a thicker stew, allow it to simmer uncovered for the last 15 minutes. For a dairy-free version, you can substitute ghee or coconut oil for butter, and omit the heavy cream, but note that this will alter the taste and texture. Always check the labels on your Worcestershire sauce to ensure it fits within your keto diet.
