Ingredients

  • 1 ripe avocado 200g / 7oz
  • ½ cup olive oil 120ml
  • 1 tbsp fresh lemon juice 15ml
  • 1 tsp white vinegar 5ml
  • ½ tsp salt 2.5g
  • ¼ tsp ground black pepper 1g
  • ½ tsp garlic powder 1.5g
  • ½ tsp onion powder 1.5g
  • 1 tsp Dijon mustard 5g

Instructions

  • Start by halving the avocado, removing the pit, and scooping out the flesh into a food processor or blender.
  • Add the fresh lemon juice, white vinegar, salt, ground black pepper, garlic powder, onion powder, and Dijon mustard to the avocado in the blender.
  • Pulse the mixture a few times to combine the ingredients.
  • With the blender running on low speed, slowly drizzle in the olive oil. This process will help emulsify the mixture, creating a smooth and creamy texture.
  • Once all the oil is incorporated, blend on high for an additional 30 seconds or until the mayo reaches your desired consistency.
  • Taste the mayo and adjust the seasoning if necessary.
  • Transfer the avocado mayo to an airtight container and refrigerate. Use within 5 days for best quality.

Notes

If the mayo is too thick, add a teaspoon of water at a time until the desired consistency is reached.
For an extra kick, add a pinch of cayenne pepper or a few drops of your favorite hot sauce.
This Keto Avocado Mayo can also be used as a base for creating flavorful aioli by adding additional ingredients like herbs and spices.
