Ingredients

  • 2 pounds Lamb shoulder, cut into cubes
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Yellow onion, diced
  • 4 Garlic cloves, minced
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Sea salt
  • ½ teaspoon Black pepper, freshly ground
  • 2 cups Chicken broth, low-sodium
  • 4 cups Fresh spinach leaves
  • Lemon zest from 1 lemon
  • 2 tablespoons Lemon juice

Instructions

  • Set the Instant Pot to 'Sauté' mode and heat the olive oil. Add the lamb cubes in batches and brown them on all sides, then transfer to a plate.
  • In the same pot, sauté the onion and garlic until translucent, about 3 minutes. Add cumin, coriander, smoked paprika, salt, and pepper, stirring for another minute to release the fragrances.
  • Return the lamb to the pot, add the chicken broth, and stir to combine. Secure the lid of the Instant Pot and set to 'Manual' or 'Pressure Cook' high for 30 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then use the quick release for any remaining pressure.
  • Stir in the fresh spinach leaves until wilted. Incorporate the lemon zest and lemon juice for a fresh burst of flavor.
  • Adjust seasoning if necessary, then serve the stew warm.

Notes

If you do not have an Instant Pot, this recipe can also be adapted for slow cooking on the stovetop, though cooking times will vary. For a thicker stew, you can remove the lid after pressure cooking and reduce the liquid on 'Sauté' mode. For a dairy-free version, ensure that your chicken broth is free from dairy ingredients.
