Ingredients

  • 6 large eggs (340g)
  • 4 oz cream cheese softened (113g)
  • 2 tbsp mayonnaise (30g)
  • 1 tbsp Dijon mustard (15g)
  • 2 tbsp fresh chives finely chopped (6g)
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish (optional)

Instructions

  • Place the eggs in a medium saucepan and cover them with cold water by about an inch. Bring the water to a rolling boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let the eggs sit for 10 minutes.
  • After 10 minutes, transfer the eggs to a bowl of ice water. Let them cool for at least 5 minutes, which will make peeling easier.
  • Gently tap each egg on the counter to crack the shell, then peel under running water to help remove the shell without damaging the egg white.
  • Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Set the egg whites aside. Add the softened cream cheese, mayonnaise, Dijon mustard, and chopped chives to the bowl with the yolks.
  • Using a fork, mash the yolks and mix them with the cream cheese, mayonnaise, mustard, and chives until smooth and creamy. Season with salt and black pepper to taste.
  • Spoon the creamy mixture back into the egg white halves. For a more elegant presentation, transfer the filling to a piping bag and pipe it into the egg whites.
  • Sprinkle a pinch of paprika on top of each deviled egg for color, if desired. Chill in the refrigerator for about 15 minutes before serving to enhance the flavors.

Notes
