Ingredients

  • 1 large Egg 50g / 1.76oz
  • ½ cup Mozzarella Cheese, shredded 56g / 2oz
  • 1 tablespoon Almond Flour 8g / 0.28oz
  • 1 tablespoon Mayonnaise 15g / 0.53oz
  • ¼ teaspoon Baking Powder 1g / 0.03oz
  • Pinch Salt 0.5g / 0.02oz
  • Non-stick cooking spray or butter for greasing

Instructions

  • Preheat your mini waffle maker.
  • In a mixing bowl, whisk the egg until frothy.
  • Add the shredded mozzarella cheese, almond flour, mayonnaise, baking powder, and a pinch of salt to the bowl. Stir until the mixture is well combined.
  • Grease the preheated waffle maker with non-stick cooking spray or butter.
  • Pour half of the batter into the center of the waffle maker, spreading it out slightly. Close the lid and cook for about 5 minutes or until the chaffle is golden and crisp.
  • Carefully remove the chaffle and set it on a wire rack to cool slightly. This will help it crisp up further.
  • Repeat with the remaining batter to make the second chaffle.

Notes

For a nut-free version, you can substitute coconut flour for almond flour; just use 1/3 of the amount as coconut flour is more absorbent.
These chaffles can be made ahead and stored in the refrigerator for up to 3 days or frozen for a longer shelf life. Reheat in a toaster or oven for best texture.
