Ingredients

  • 2 cups Almond flour (224g)
  • ¼ cup Coconut flour (30g)
  • ½ cup Flaxseed meal (60g)
  • 4 tsp Baking powder (20g)
  • 1 tsp Xanthan gum (4g)
  • ½ tsp Sea salt (3g)
  • ¼ cup Erythritol (48g)
  • 6 large Egg whites (about 3/4 cup, 180ml)
  • ½ cup Warm water (120ml)
  • 1 tbsp Apple cider vinegar (15ml)

Instructions

  • Preheat your oven to 375°F (190°C). Line a 9x5 inch loaf pan with parchment paper or lightly grease it.
  • In a large mixing bowl, whisk together the almond flour, coconut flour, flaxseed meal, baking powder, xanthan gum, and sea salt.
  • Stir in the erythritol until evenly distributed.
  • In a separate bowl, beat the egg whites until stiff peaks form. This will help give the bread a good rise and a lighter texture.
  • Gently fold the egg whites into the dry ingredients, being careful not to deflate them too much.
  • Gradually add the warm water and apple cider vinegar to the mixture, stirring until you have a thick batter.
  • Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 30 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
