Ingredients

  • 1 ½ cups Almond Flour 150g / 5.3 oz
  • ½ cup Coconut Flour 60g / 2.1 oz
  • ¼ cup Ground Flaxseed 28g / 1 oz
  • ¼ cup Psyllium Husk Powder 28g / 1 oz
  • 2 tsp Baking Powder 9g / 0.3 oz
  • ½ tsp Sea Salt 2g / 0.07 oz
  • 5 Large Eggs
  • ¼ cup Olive Oil 60ml / 2 fl oz
  • 1 cup Boiling Water 240ml / 8 fl oz

Instructions

  • Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  • In a large mixing bowl, whisk together the almond flour, coconut flour, ground flaxseed, psyllium husk powder, baking powder, and sea salt.
  • In a separate bowl, beat the eggs until frothy, then mix in the olive oil.
  • Combine the wet and dry ingredients until the mixture is well incorporated.
  • Gradually add the boiling water to the mixture, stirring continuously until the dough begins to thicken.
  • Transfer the dough into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 30 minutes or until the bread has risen and the top is golden brown.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice the bread once cooled and serve as desired.

Notes

For a nuttier flavor, you can add 1/2 cup of your favorite seeds or chopped nuts to the bread mix. Ensure the bread is completely cooled before slicing to prevent it from crumbling. This keto bread can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
