Equipment

  • Oven
  • Baking sheet or oven-proof skillet
  • Small bowl
  • Measuring spoons
  • Paper towels
  • Meat thermometer

Ingredients

  • 4 bone-in pork chops, about 1 inch thick (1.5 lbs / 680 g)
  • 2 tbsp olive oil (30 ml)
  • 1 tsp garlic powder (3.1 g)
  • 1 tsp onion powder (2.1 g)
  • 1 tsp paprika (2.3 g)
  • ½ tsp dried oregano (0.5 g)
  • ½ tsp dried thyme (0.5 g)
  • Salt and pepper to taste
  • 1 tbsp unsalted butter divided into 4 pieces (14 g)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together the garlic powder, onion powder, paprika, dried oregano, dried thyme, salt, and pepper to create the seasoning blend.
  • Pat the pork chops dry with paper towels to ensure proper browning. Rub each pork chop with olive oil, then coat each side generously with the seasoning blend.
  • Place the seasoned pork chops onto a greased baking sheet or in a large oven-proof skillet.
  • Top each pork chop with a slice of butter to keep them moist and add richness to the flavor.
  • Bake in the preheated oven for about 20 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
  • Remove the pork chops from the oven and let them rest for 3-5 minutes to allow the juices to redistribute. This step ensures the pork chops are juicy and tender.
  • Serve the pork chops with your favorite keto-friendly sides, such as a green salad or sautéed vegetables.

Notes

For extra flavor, consider marinating the pork chops for 1-2 hours before cooking. If you prefer a crispier crust, you may broil the pork chops for the final 2-3 minutes of cook time. Always let the meat rest before slicing to retain moisture.
