Ingredients

  • 4 oz fresh spinach chopped
  • 4 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • chopped walnuts or pecans for coating

Instructions

  • In a skillet over medium heat, lightly sauté the chopped spinach for about 2-3 minutes until wilted. Remove from heat and let it cool slightly.
  • In a large mixing bowl, combine the softened goat cheese and cream cheese. Use a hand mixer or a fork to blend them together until they are smooth and creamy.
  • Incorporate the sautéed spinach, minced garlic, olive oil, salt, black pepper, onion powder, and dried oregano into the cheese mixture. Mix well until all ingredients are thoroughly combined and the spinach is evenly distributed.
  • Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat the process until all the mixture is used. You should end up with about 12 fat bombs.
  • If desired, roll each fat bomb in chopped walnuts or pecans for an added crunch and flavor.
  • Place the fat bombs on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.

Notes
