Ingredients

  • 1 medium head cauliflower (about 1.5 lbs / 680 g), cut into florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup kimchi (chopped)
  • ¼ cup cream cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons green onions (sliced, for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes, or until tender but still firm. Drain the cauliflower and set aside.
  • In a medium saucepan over medium heat, melt the butter. Add the heavy cream and cream cheese, stirring until the cream cheese is fully melted and incorporated.
  • Gradually add the shredded cheddar and mozzarella cheese to the saucepan, stirring constantly until the cheese is melted and the sauce is smooth.
  • Stir in the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well to combine all flavors.
  • In a large mixing bowl, combine the drained cauliflower and the cheese sauce. Gently fold in the chopped kimchi until evenly distributed.
  • Pour the cauliflower mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it out evenly.
  • Place the dish in the preheated oven and bake for 15-20 minutes, or until the top is bubbly and golden brown.
  • Once done, remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.

Notes

Feel free to adjust the spice level by adding more or less cayenne pepper. You can also substitute the cheeses to your liking, using pepper jack for an extra kick or a vegan cheese alternative for a dairy-free option.
