Ingredients

  • 1 pound pork shoulder, cut into 1-inch cubes 454g
  • 2 medium bell peppers, assorted colors, cut into 1-inch pieces about 300g
  • ¼ cup olive oil 60ml
  • 2 tablespoons apple cider vinegar 30ml
  • 1 tablespoon smoked paprika 6.8g
  • 1 teaspoon garlic powder 3.1g
  • 1 teaspoon onion powder 2.1g
  • ½ teaspoon cayenne pepper 1.1g
  • ½ teaspoon red pepper flakes 1.1g
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish optional

Instructions

  • In a mixing bowl, combine olive oil, apple cider vinegar, smoked paprika, garlic powder, onion powder, cayenne pepper, red pepper flakes, salt, and pepper. Whisk together to create the marinade.
  • Add pork cubes to the marinade and toss to ensure each piece is thoroughly coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
  • Preheat your grill to medium-high heat.
  • While the grill is heating, thread the marinated pork cubes and bell pepper pieces alternately onto skewers.
  • Place the skewers on the hot grill and cook for about 10 minutes, turning occasionally, until the pork is cooked through and the peppers are slightly charred.
  • Remove the skewers from the grill and let them rest for a few minutes.
  • Serve hot, garnished with fresh parsley if desired.

Notes

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
Adjust the level of spiciness to your preference by increasing or decreasing the amount of cayenne pepper and red pepper flakes.
Leftovers can be stored in the refrigerator for up to 3 days and make a great addition to salads or keto wraps.
