Instructions
In a mixing bowl, combine olive oil, apple cider vinegar, smoked paprika, garlic powder, onion powder, cayenne pepper, red pepper flakes, salt, and pepper. Whisk together to create the marinade.
Add pork cubes to the marinade and toss to ensure each piece is thoroughly coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
Preheat your grill to medium-high heat.
While the grill is heating, thread the marinated pork cubes and bell pepper pieces alternately onto skewers.
Place the skewers on the hot grill and cook for about 10 minutes, turning occasionally, until the pork is cooked through and the peppers are slightly charred.
Remove the skewers from the grill and let them rest for a few minutes.
