Ingredients

  • 2 lbs chicken breasts, boneless and skinless
  • 1 large red bell pepper, sliced about 150g
  • 1 large green bell pepper, sliced about 150g
  • 1 medium yellow onion, sliced about 110g
  • 3 cloves garlic, minced about 9g
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper optional, adjust for heat preference
  • Salt and pepper, to taste
  • 1 lime, juice of about 2 tablespoons or 30ml
  • Fresh cilantro for garnish optional

Instructions

  • Lay the sliced bell peppers and onions at the bottom of the slow cooker.
  • In a small bowl, mix together the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and pepper.
  • Drizzle the chicken breasts with 1 tablespoon of olive oil and rub the spice mixture all over the chicken until well coated.
  • Place the seasoned chicken on top of the peppers and onions in the slow cooker.
  • Mince the garlic and sprinkle over the chicken.
  • Cover and cook on high for 3-4 hours or on low for 6-7 hours, or until the chicken is cooked through and shreds easily.
  • Once cooked, shred the chicken with two forks directly in the slow cooker and stir to combine with the peppers and onions.
  • Drizzle with the remaining tablespoon of olive oil and squeeze lime juice over the mixture. Stir to combine.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh cilantro if desired.

Notes

For a complete keto meal, serve these fajitas with low-carb tortillas or over a bed of lettuce for a fajita salad.
The leftovers can be stored in an airtight container in the refrigerator for up to 3 days and are perfect for meal prep.
If you prefer your fajitas with a bit more sauce, consider adding a can of diced tomatoes (drained) or a few tablespoons of chicken broth before cooking.
Adjust the cayenne pepper to your heat preference or omit it entirely for a milder flavor.
