Instructions
Lay the sliced bell peppers and onions at the bottom of the slow cooker.
In a small bowl, mix together the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and pepper.
Drizzle the chicken breasts with 1 tablespoon of olive oil and rub the spice mixture all over the chicken until well coated.
Place the seasoned chicken on top of the peppers and onions in the slow cooker.
Mince the garlic and sprinkle over the chicken.
Cover and cook on high for 3-4 hours or on low for 6-7 hours, or until the chicken is cooked through and shreds easily.
Once cooked, shred the chicken with two forks directly in the slow cooker and stir to combine with the peppers and onions.
Drizzle with the remaining tablespoon of olive oil and squeeze lime juice over the mixture. Stir to combine.
Taste and adjust seasoning if necessary.
Serve hot, garnished with fresh cilantro if desired.
