Equipment

  • Waffle Maker
  • Mixing bowls
  • Whisk
  • Spatula

Ingredients

For the Waffles

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 4 large eggs
  • ¼ cup unsweetened almond milk
  • ¼ cup melted butter or coconut oil
  • ½ cup shredded cheese (cheddar or mozzarella)

For the Herb Cream Cheese

  • 8 oz cream cheese softened
  • 1 tablespoon fresh chives finely chopped
  • 1 tablespoon fresh parsley finely chopped
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  • Preheat the Waffle Maker: Begin by preheating your waffle maker according to the manufacturer's instructions.
  • Prepare the Waffle Batter: In a large mixing bowl, combine the almond flour, coconut flour, baking powder, salt, garlic powder, and black pepper. Whisk these dry ingredients until fully combined.
  • Mix Wet Ingredients: In another bowl, beat the eggs. Then add the unsweetened almond milk and melted butter (or coconut oil). Mix well until the mixture is smooth.
  • Combine Wet and Dry: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix. Fold in the shredded cheese.
  • Cook the Waffles: Lightly grease the waffle maker with cooking spray or additional melted butter. Pour the batter into the preheated waffle maker, using about 1/2 cup for each waffle (adjust according to your waffle maker's size). Close the lid and cook for about 5-7 minutes, or until the waffles are golden brown and cooked through.
  • Prepare the Herb Cream Cheese: While the waffles are cooking, prepare the herb cream cheese. In a medium bowl, combine the softened cream cheese, chopped chives, parsley, garlic powder, lemon juice, and a pinch of salt and pepper. Mix until smooth and evenly distributed.
  • Serve: Once the waffles are done, carefully remove them from the waffle maker. Serve warm, topped generously with the herb cream cheese spread.

Notes

Feel free to customize the herb cream cheese with your favorite herbs or spices for a personal touch. These waffles can be stored in an airtight container in the fridge for up to 3 days, and they also freeze well for a quick breakfast option.
