Ingredients

  • 1 medium head cabbage about 2 pounds or 900 grams, sliced into strips
  • 6 slices thick-cut bacon about 6 ounces or 170 grams, chopped
  • 1 medium onion about 4 ounces or 113 grams, finely chopped
  • 3 cloves garlic minced
  • ½ tsp red pepper flakes optional
  • Salt and pepper to taste
  • 2 tbsp apple cider vinegar
  • 2 tbsp unsalted butter

Instructions

  • In a large skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon from the skillet and set aside on a paper towel to drain, leaving the bacon grease in the skillet.
  • Add the butter to the skillet with the bacon grease and let it melt. Then add the chopped onion and sauté until translucent and slightly golden, about 3-4 minutes.
  • Stir in the minced garlic and red pepper flakes, if using, and cook for another minute until the garlic is fragrant.
  • Add the sliced cabbage to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the cabbage is tender and begins to brown, about 10 minutes.
  • Pour in the apple cider vinegar and mix well to deglaze the pan, scraping up any browned bits stuck to the bottom.
  • Return the cooked bacon to the skillet and mix with the cabbage until everything is well combined and heated through.
  • Taste and adjust seasoning if necessary, then serve immediately.

Notes

For a vegetarian version, omit the bacon and use a keto-friendly vegetable oil or coconut oil instead of the bacon grease.
Adjust the heat level to your preference by adding more or less red pepper flakes.
The apple cider vinegar adds a nice tangy contrast to the dish but can be omitted if preferred.
