Instructions

  • Prepare the Ingredients: Begin by cutting the cod fillets into bite-sized chunks and set aside. Dice the onion and bell pepper, and mince the garlic. Gather the saffron, smoked paprika, and cayenne pepper.
  • Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes. Stir in the garlic, saffron, smoked paprika, and cayenne pepper, and cook for another minute until fragrant.
  • Add Vegetables: Incorporate the diced bell pepper and cook for 3-4 minutes, until slightly softened.
  • Simmer the Stew: Pour in the canned diced tomatoes and broth. Stir well to combine and bring the mixture to a simmer.
  • Cook the Cod: Season the cod chunks with salt and pepper and carefully add them to the pot. Simmer for about 10 minutes, or until the cod is cooked through and flakes easily with a fork.
  • Finish with Cream: Reduce the heat to low and stir in the heavy cream. Allow the stew to heat through but avoid boiling after adding the cream.
  • Serve: Taste and adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley.
