  • 1 teaspoon smoked paprika (5 g)
  • ½ teaspoon sea salt (2 g), or to taste
  • ¼ teaspoon black pepper (1 g), or to taste
  • 1-2 tablespoons truffle oil (15-30 ml), to taste
  • Fresh parsley (for garnish, optional)

Instructions

  • Preheat your oven to 425°F (220°C). This high temperature will help achieve that perfect roasted texture.
  • Remove the leaves and stem from the cauliflower head. Cut it into bite-sized florets, ensuring they are roughly the same size for even cooking.
  • In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Add the cauliflower florets to the bowl and toss until they are evenly coated in the oil and seasoning mixture.
  • Spread the seasoned florets in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is golden brown and crispy around the edges. Halfway through, give them a good stir to ensure even roasting.
  • Once roasted, remove the baking sheet from the oven. Drizzle the truffle oil over the hot cauliflower and toss gently to combine.
  • Transfer the cauliflower popcorn to a serving bowl. Garnish with freshly chopped parsley if desired, and enjoy immediately while warm!

Feel free to adjust the seasoning according to your taste preferences. Add a pinch of cayenne pepper for a spicy kick or switch up the spices for a different flavor profile.
Truffle oil can be potent, so start with 1 tablespoon and add more if desired.
