Ingredients

  • 6 large eggs (340g)
  • ¼ cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • teaspoon black pepper
  • ½ tablespoon apple cider vinegar

Instructions

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil over medium heat. Once boiling, cover the pan, remove it from heat, and let it sit for 10-12 minutes.
  • After the timer goes off, carefully transfer the eggs to a bowl of ice water to stop the cooking process. Let them cool for about 5-10 minutes.
  • Once cooled, gently tap each egg on a hard surface to crack the shell. Roll the egg between your hands to loosen the shell, then peel under running water for easier removal.
  • Slice each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl. Place the egg whites on a serving platter.
  • Add the pumpkin puree, mayonnaise, Dijon mustard, pumpkin pie spice, salt, pepper, and apple cider vinegar to the bowl with the yolks. Mash everything together with a fork until smooth and creamy. Taste and adjust seasoning if necessary.
  • Using a spoon or piping bag, fill each egg white half with the pumpkin spice mixture, mounding it slightly for an appealing presentation.
  • Sprinkle with chopped fresh parsley or chives for a pop of color and added flavor. Serve immediately, or refrigerate for up to 2 hours before serving.
