Ingredients

  • 4 large Portobello mushrooms, stems removed approx. 6 oz or 170g each
  • 1 pound ground beef, 80/20
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 2 slices cheddar cheese approx. 1 oz or 28g each
  • 1 small red onion, thinly sliced approx. 2 oz or 56g
  • 4 leaves lettuce
  • 1 tomato, sliced approx. 3 oz or 85g
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon unsweetened ketchup
  • 1 teaspoon Worcestershire sauce optional

Instructions

  • Preheat your grill or grilling pan over medium-high heat.
  • Brush the Portobello mushrooms with olive oil and season with a pinch of salt and pepper. Set aside.
  • In a bowl, mix the ground beef with salt, black pepper, and Worcestershire sauce (if using) until well combined.
  • Divide the beef mixture into two equal portions and form them into patties slightly larger than the mushrooms.
  • Place the mushrooms and beef patties on the grill. Cook the mushrooms for about 4 minutes on each side or until they are tender and the beef patties for about 5 minutes on each side or until they reach your desired level of doneness.
  • In the last minute of cooking, place a slice of cheddar cheese on each patty and let it melt.
  • Remove the mushrooms and patties from the grill and let them rest for a couple of minutes.
  • To assemble the burgers, place one Portobello mushroom cap, gill-side up, on a plate. Add a lettuce leaf, followed by the cheesy beef patty, a slice of tomato, some red onion, and a dollop each of mayonnaise, mustard, and ketchup.
  • Top with the second Portobello cap, gill-side down, and serve immediately.
