Ingredients

  • 4 large chicken breasts (about 6 oz / 170 g each)
  • 1 cup shredded mozzarella cheese (100 g)
  • ½ cup sliced pepperoni (50 g)
  • ½ cup marinara sauce (low-carb, 120 g)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice each chicken breast horizontally to create a pocket. Season with salt, pepper, garlic powder, and Italian seasoning.
  • In a bowl, mix mozzarella cheese, pepperoni, and marinara sauce. Fill each chicken pocket with the mixture.
  • Sear the stuffed chicken in olive oil for 3-4 minutes on each side until golden brown.
  • Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before serving. Garnish with fresh basil if desired.

Notes
