Ingredients

  • 4 large bell peppers (any color) (about 600g)
  • 1 lb ground beef or turkey
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded mozzarella cheese
  • ½ cup sliced pepperoni (about 75g)
  • ¼ cup chopped black olives (optional)
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (15ml)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Trim the bottom if necessary to ensure they stand upright. Place in a baking dish, cut side up.
  • In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, about 5-7 minutes.
  • Stir in the diced tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper. Let it simmer for about 5 minutes.
  • Remove from heat and stir in half of the mozzarella cheese, pepperoni, and black olives (if using). Spoon the filling into each bell pepper.
  • Sprinkle the remaining mozzarella cheese on top of each pepper.
  • Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Let cool for a few minutes before serving warm.

Notes

Feel free to customize the toppings based on your preferences. These stuffed peppers also freeze well, making them a great option for meal prep!
