Ingredients

  • 1 cup natural peanut butter unsweetened
  • ½ cup unsalted butter softened
  • ¼ cup coconut oil melted
  • ¼ cup erythritol or your preferred keto sweetener
  • ½ tsp vanilla extract
  • ½ tsp salt
  • 6 strips bacon cooked until crispy and crumbled
  • ¼ cup chopped dark chocolate optional (85% cocoa or higher)

Instructions

  • Start by cooking the bacon in a skillet over medium heat until it is crispy. This should take about 6-8 minutes. Once cooked, remove the bacon from the skillet and place it on a paper towel to absorb excess grease. Once cooled, crumble the bacon into small pieces and set aside.
  • In a large mixing bowl, combine the softened unsalted butter, natural peanut butter, and melted coconut oil. Use a hand mixer or stand mixer to blend the ingredients until they are smooth and well incorporated.
  • Add the erythritol (or your chosen sweetener), vanilla extract, and salt to the peanut butter mixture. Mix again on medium speed until everything is evenly combined and the mixture is fluffy.
  • Gently fold in the crumbled bacon pieces. If you're using dark chocolate, you can also fold in the chopped chocolate at this stage for added richness.
  • Line a mini muffin tin with silicone or paper liners. Using a spoon or small cookie scoop, fill each cavity with the peanut butter and bacon mixture, pressing down slightly to ensure they hold their shape.
  • Place the filled muffin tin in the freezer for about 30 minutes or until the fat bombs are solid. This helps them to set firmly.
  • Once set, remove the fat bombs from the tin and store them in an airtight container in the refrigerator. They can also be kept in the freezer for longer shelf life.
