Equipment

  • Large mixing bowl
  • Large skillet
  • Medium bowl
  • Measuring cups and spoons
  • Knife and cutting board

Ingredients

Koftas

  • 1 pound ground lamb 453g
  • 1 small onion, finely chopped approximately 1/2 cup / 75g
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil for frying

Tzatziki Sauce

  • 1 cup full-fat Greek yogurt 240g
  • 1 small cucumber, seeded and finely diced approximately 1/2 cup / 65g
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • 2 teaspoons lemon juice
  • Salt and pepper to taste

Instructions

  • In a large mixing bowl, combine the ground lamb, onion, garlic, parsley, cumin, paprika, coriander, cayenne pepper, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.
  • Shape the mixture into small, oval-shaped koftas, about 1 inch in length. You should be able to form around 16 mini koftas.
  • Heat the olive oil in a large skillet over medium heat. Once hot, add the koftas to the pan. Cook for about 7-8 minutes, turning occasionally, until they are browned on all sides and cooked through.
  • While the koftas are cooking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, diced cucumber, dill, minced garlic, and lemon juice. Stir until well combined and season with salt and pepper to taste. Refrigerate until ready to serve.
  • Once the koftas are done, transfer them to a serving plate and let them rest for a couple of minutes.
  • Serve the warm mini lamb koftas with the chilled tzatziki sauce on the side for dipping.

Notes

The koftas can be prepared ahead of time and stored in the refrigerator for up to 24 hours before cooking.
For a dairy-free tzatziki, substitute the Greek yogurt with a dairy-free alternative like coconut yogurt.
Adjust the level of spices in the koftas according to your preference for heat.
