Mediterranean Keto Chicken Salad with Olives and Feta
This Mediterranean Keto Chicken Salad combines the zesty flavors of the Mediterranean with the low-carb benefits of a keto diet. Featuring succulent chicken, tangy feta cheese, and a variety of fresh vegetables, it's a perfect meal for anyone looking for a delicious and healthy option.
Preheat a grill or skillet over medium-high heat. Brush the chicken breasts with 1 tablespoon of olive oil and season with salt, pepper, and garlic powder.
Grill the chicken for 5 minutes on each side or until fully cooked through and the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing into strips.
In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, diced cucumber, sliced red onion, and Kalamata olives.
In a small bowl, whisk together the remaining olive oil, lemon juice, red wine vinegar, dried oregano, and additional salt and pepper to create the dressing.
Drizzle the dressing over the salad and toss well to coat the ingredients evenly.
Top the salad with grilled chicken strips, crumbled feta cheese, and chopped parsley.
Serve immediately or chill in the refrigerator for an hour to allow the flavors to meld.
