Ingredients

For the Pancake Batter

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp erythritol or your preferred keto sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter

For the Filling

  • ¼ cup sugar-free maple syrup
  • 4 slices cooked bacon, crumbled

Instructions

  • In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Whisk to blend the dry ingredients thoroughly.
  • In a separate bowl, beat the eggs, then add the almond milk, vanilla extract, and melted butter. Mix until well combined.
  • Pour the wet mixture into the dry ingredients. Stir until just combined, ensuring not to overmix; a few lumps are okay.
  • In a small bowl, mix the crumbled bacon with the sugar-free maple syrup. Set aside.
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
  • Once the pancakes are cooked, take one pancake and place a spoonful of the maple-bacon filling in the center. Top with another pancake, gently pressing down to seal the filling inside. Repeat with the remaining pancakes and filling.
  • Return the assembled pancake bombs to the skillet, cooking each side for an additional 1-2 minutes until heated through and slightly crispy.
  • Serve warm, drizzled with extra sugar-free maple syrup if desired.
