Ingredients

  • 12 large cabbage leaves 600g
  • 1 medium head cauliflower riced, approximately 1 pound or 450g
  • 1 pound ground beef 450g
  • ¼ cup diced onions 60g
  • 2 cloves garlic minced
  • 1 large egg
  • 1 tbsp olive oil 15ml
  • 1 tsp salt 5g
  • ½ tsp black pepper 2.5g
  • ½ tsp paprika 2.5g
  • 1 cup low-carb marinara sauce 240ml
  • ½ cup beef broth 120ml
  • ¼ cup shredded mozzarella cheese optional, 60g
  • Fresh parsley chopped for garnish, optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of water to a boil and blanch the cabbage leaves for 2-3 minutes until they become pliable. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add onions and garlic, sautéing until translucent.
  • Increase the heat to medium-high and add the ground beef, cooking until browned. Drain excess grease.
  • In a large bowl, combine the riced cauliflower, cooked ground beef, egg, salt, pepper, and paprika. Mix thoroughly.
  • Lay out a cabbage leaf and place a portion of the filling in the center. Fold in the sides and roll up the leaf to encase the filling. Repeat with the remaining leaves and filling.
  • Pour half of the marinara sauce into the bottom of a baking dish.
  • Place the cabbage rolls seam side down in the dish.
  • Pour the remaining marinara sauce and beef broth over the rolls.
  • Cover with foil and bake for 30 minutes.
  • If using cheese, remove foil, sprinkle cheese over the rolls, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley before serving if desired.

Notes

To make the dish dairy-free, simply omit the cheese. The rolls can be prepared ahead of time and refrigerated until ready to bake. Leftovers store well and can be reheated for a quick and easy keto-friendly meal.
