Ingredients

  • 1 cup almond flour (96g)
  • ½ cup coconut flour (60g)
  • 1 tbsp baking powder (14g)
  • ¼ tsp salt (1.5g)
  • 1 cup shredded cheddar cheese (113g)
  • ½ pound ground sausage (cooked and crumbled) (227g)
  • 4 large eggs
  • ¼ cup heavy cream (60ml)
  • ¼ cup water (60ml)
  • 2 tbsp melted unsalted butter (30ml)

Instructions

  • Preheat your waffle iron according to the manufacturer's instructions.
  • In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt.
  • Stir in the shredded cheddar cheese and cooked crumbled sausage, mixing until well combined.
  • In a separate bowl, beat the eggs and then whisk in the heavy cream, water, and melted butter.
  • Pour the wet ingredients into the dry mixture and stir until a batter is formed.
  • Grease the waffle iron lightly with cooking spray or additional butter.
  • Scoop the batter onto the waffle iron, using approximately 1/4 cup for each waffle. Close the lid and cook until the waffles are golden brown and crispy, about 3-5 minutes.
  • Carefully remove the waffles from the iron and serve hot.

Notes

The batter can be made in advance and stored in the refrigerator for up to a day.
If you don't have a waffle iron, this batter can also be used to make savory pancakes in a skillet.
For a spicy kick, consider adding a pinch of cayenne pepper or diced jalapeños to the batter.
