Ingredients

  • 2 lbs chicken wings, tips removed and drums/flats separated

  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  • In a large bowl, toss the chicken wings with olive oil, salt, and pepper until they are evenly coated.
  • Arrange the wings on the prepared baking sheet in a single layer, ensuring they are not touching for even cooking.
  • Bake in the preheated oven for 35-40 minutes, or until the wings are golden brown and crispy, flipping halfway through the cooking time.
  • While the wings are baking, prepare the raspberry chipotle sauce. In a saucepan over medium heat, combine the sugar-free raspberry jam, chipotle peppers, apple cider vinegar, garlic powder, and smoked paprika. Stir until well combined.
  • If the sauce is too thick, add a tablespoon of water to reach the desired consistency. Allow the sauce to simmer for 5-7 minutes, stirring occasionally, then remove from heat.
  • Once the wings are cooked, remove them from the oven and let them rest for a few minutes.
  • Place the wings in a large bowl and pour the raspberry chipotle sauce over them. Toss until all the wings are generously coated with the sauce.
  • Serve the wings immediately, garnished with fresh chopped cilantro or parsley if desired.

Notes

For a spicier kick, add an extra chipotle pepper or a pinch of cayenne pepper to the sauce.
The sugar-free raspberry jam can be homemade or store-bought, but ensure it's sweetened with a keto-friendly sweetener.
Leftover wings can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
